The Banquet Sous Chef oversees high-volume event production in a luxury resort setting. Coordinate banquet menus, lead kitchen staff during peak services, and ensure food quality for large gatherings. Join a daily focus on exceptional culinary standards amid the Catalina Mountains.
Requirements
- Experience in banquet or high-volume catering kitchens
- Proficiency in luxury resort culinary standards
- Leadership skills for supervising kitchen teams
- Knowledge of food safety and HACCP protocols
- Expertise in menu planning for events
- Ability to handle fast-paced banquet service
- Familiarity with cost control in catering operations
- Strong organizational skills for event execution
Responsibilities
- Oversee banquet kitchen operations and staff during events
- Develop and execute menus for banquets and large-scale functions
- Ensure food quality, presentation, and timing for guest events
- Manage inventory, portion control, and costs for banquet production
- Coordinate with banquet managers and event planners on specifications
- Maintain sanitation standards and compliance in high-volume service
- Train banquet cooks on recipes and event procedures
- Prepare plated and buffet services for resort functions
