About this role
The Sous Chef at Margaritaville directs, manages, and operates a high-volume branded concept on CityWalk. This role serves as the primary go-to for the kitchen team, overseeing back-of-house functions and flow. Reporting to the Restaurant Chef, it sets expectations for productivity across all kitchen team members.
Ensure food served always meets or exceeds standards of excellence while driving operating profit goals and sales. Optimize profits by controlling food, beverage, and labor costs to maintain or exceed weekly budgeted variable operation profit. Consistently achieve operational excellence with limited supervision.
Develop and retain exceptional talent by hiring, training, and cross-training kitchen staff in specific stations. Partner with Human Resources to train restaurant leaders and ensure high Team Member and Guest Engagement. Mentor and counsel team members while enforcing policies and procedures.
Communicate restaurant results to the Restaurant Chef and General Manager with improvement recommendations. Promote company's mission and values while ensuring compliance with all local, state, and federal laws on food quality, safety, labor, and employment. Operate within a leading media and entertainment company with global theme park destinations.
Requirements
- Ability to work effectively with limited supervision

- Knowledge of local, state, and federal food safety and employment laws

- Skills in inventory management, scheduling, and equipment maintenance
