Day-to-day, the Executive Chef manages galley operations, monitors tasting panels, and inspects mise-en-place to guarantee product quality. They handle guest complaints regarding menu delivery with personalized service recovery, and ensure special dietary requirements are always accommodated.

The Executive Chef leads a diverse culinary team from over 60 countries, directing the Provision Master and Food and Beverage Storekeepers in efficient provisioning. They collaborate with the Hotel Inventory Manager and Food & Beverage team to keep culinary production within budgeted targets.

Requirements

  • Proven experience as an Executive Chef or senior culinary manager in high-volume, multi-outlet operations such as cruise lines, resorts, or hotels.
  • Demonstrated expertise in menu planning, food cost control, and provisioning for large-scale operations.
  • Strong knowledge of food safety standards and health regulations for maritime or hospitality environments.
  • Ability to lead and develop a diverse, multicultural culinary team.
  • Experience handling special dietary requirements and guest service recovery in a premium service setting.
  • Proficiency with culinary management systems and inventory tools.
  • Excellent organizational skills to manage galley operations and adherence to budgets.
  • Willingness to work on a fixed-term contract with global travel and extended periods at sea.

Responsibilities

  • Oversee all onboard culinary operations and galley management to ensure menu execution consistent with company standards.
  • Ensure product quality by regularly monitoring tasting panels and inspecting mise-en-place during preparation periods.
  • Resolve all passenger complaints regarding menu delivery to the passenger's satisfaction and take full ownership of service recovery.
  • Ensure menu options are available for guests with special dietary requirements and advise guests when possible.
  • Consistently exceed Food & Beverage Division specific targets and key result areas to reduce friction points.
  • Utilize Princess sponsored tools and systems to ensure culinary teammates execute duties related to delivery, production, and food quality.
  • Prepare accurate plans and quantities for provisioning to prevent shortages while adhering to food waste control initiatives.
  • Direct the Provision Master and Food and Beverage Storekeepers in efficient and economic ordering, preservation, and utilization of provisions.
