About this role
Carversteak at Resorts World Las Vegas is a reimagining of the casino steakhouse, paying homage to mid-century modern classic nostalgia while utilizing contemporary design, technology, and techniques. The 14,500-square-foot property offers an expansive bar and lounge area, a plush main dining room, and a sweeping terrace with an outdoor bar overlooking the Las Vegas Strip.
The Executive Chef manages daily kitchen operations and employees in accordance with company policies, overseeing the kitchen staff to consistently provide high-quality food to guests. This role partners with the General Manager to set, meet, and exceed the goals of the business while ensuring all food and labor cost goals are met.
The menu features dry-aged American steaks from artisan beef producers and Japanese-certified Wagyu steaks alongside classic preparations infused with seasonal ingredients and an array of vegan selections. The beverage program includes an extensive wine list, curated whiskey collection, and an Avant-Garden cocktail experience with an onsite herb garden.
This leadership position offers the opportunity to develop and produce new recipes for potential menu items and specials while coaching and developing heart-of-house employees. The Executive Chef ensures compliance with Department of Health standards and all federal, state, and local regulations.
Requirements
- In-depth knowledge of operational systems including payroll, inventory, and purchasing
- In-depth knowledge of all food menus and the venue
- Practical knowledge of the job duties of all supervised employees
- Ability to coach and develop heart-of-house employees by setting clear guidelines and expectations
- Experience ensuring expediting standards are maintained
- Ability to meet or exceed budget expectations through controlling P&L items
- Professional appearance standards as directed in the Carver Road Hospitality Employee Handbook
Responsibilities
- Handle all allergy and dietary restrictions and modifications
- Ensure BOH employees accurately follow all orders received from the POS system or direction from the expeditor
- Conduct decision-making for interviewing, hiring, and training new applicants
- Oversee operations to ensure safety, quality, recipe accuracy, and financial profitability
- Supervise the execution of regular service, catering, take-out, delivery, and all in/off-venue events
- Maintain the venue's monthly Profit & Loss statement standards in partnership with the General Manager
- Organize, develop, and produce new recipes for potential new menu items and specials
- Ensure Department of Health and Company sanitation standards are met
