About this role

Under direct supervision of the Sous Chef or Stewarding Supervisor, Stewarding Manager and/or Executive Chef, the Kitchen Cleaner washes and sanitizes all equipment and utensils used in food preparation. This essential role maintains hygiene standards in a high-volume kitchen environment at Navajo Nation Gaming Enterprise. It supports smooth food service operations daily.

Day-to-day tasks focus on thorough cleaning of pots, pans, dishes, and prep surfaces to prevent contamination. The role involves operating dishwashers, scrubbing ovens, and wiping down counters after each shift. Precision ensures compliance with health and safety protocols in a fast-paced casino kitchen.

Working under chef supervision in a team-oriented stewarding department, the cleaner collaborates with kitchen staff during peak service hours. The gaming enterprise setting demands reliability amid busy events and dining rushes. Direct oversight provides guidance on best practices for sanitation.

Requirements

  • High School Diploma or GED
  • Work experience in restaurant or kitchen maintenance area preferred
  • Twenty-one years (21) of age
  • No felony, theft or stealing convictions
  • Successfully pass pre-employment drug/alcohol screen
  • Pass background investigation
  • Obtain and maintain gaming license
  • Navajo preference

Responsibilities

  • Wash and sanitize all equipment and utensils used in food preparation
  • Operate industrial dishwashers and three-compartment sinks
  • Clean kitchen floors, walls, and grease traps daily
  • Polish and store silverware, glassware, and cookware
  • Empty trash bins and recyclables from kitchen areas
  • Wipe down counters, stoves, and refrigeration units
  • Assist in breakdown and setup of banquet equipment
