Embrace the company’s mandated F&B menu and purchasing programs while keeping an eye on the numbers by maintaining budgeted revenue, costs, labor, and operating cash flow. Review monthly profit and loss statements, making adjustments as necessary. Plan like a pro by estimating food consumption and scheduling staff efficiently.
Get the party started by working with the operations team and sales staff to plan, supervise, and execute all events, including food and beverage preparation and service. Assemble an all-star team by recruiting, hiring, training, and retaining rock star kitchen staff, developing sous chefs and lead cooks. Commit to quality by ensuring product freshness, presentation, and company standards.
Lead a team of lead cooks, cooks, dishwashers, and servers in a demanding yet rewarding entertainment center, reporting to the General Manager on all food-related matters. Experience prepping catered events is desirable. Thrive with highly developed customer service, interpersonal skills, and profit and loss capability.
Requirements
- 5+ Years of Kitchen Management / Executive Chef Experience
- Bachelor’s or culinary degree preferred
- Experience in high-volume retail, entertainment, hospitality, or restaurant venue required
- Extensive experience in banquet style events
- Experience managing and developing teams required
- Current ServSafe certification required
- ServSafe instructor certification or ability to be certified preferred
- Highly developed sense of customer service, interpersonal/communication skills, and profit and loss capability
Responsibilities
- Adhere to the company’s mandated F&B menu and purchasing programs
- Maintain budgeted revenue, costs of sales, labor, supplies, and operating cash flow; review monthly profit and loss statements and make adjustments
- Work with the Operations team and Sales staff to plan, supervise, and execute all events, including food and beverage preparation, service, and cleanup
- Estimate food consumption and make purchases from specified food program; schedule staff efficiently to accommodate shifts in business volume
- Recruit, hire, train, and retain kitchen staff; develop key staff including sous chefs and lead cooks
- Ensure product quality, freshness, and presentation meet company standards; supervise preparation, portioning, garnishing, and storage of all food
- Manage kitchen equipment maintenance and conduct sanitation audits and cleaning schedules to comply with Department of Health regulations; report critical issues to General Manager
