About this role
Join the kitchen team at Oceania Nantes Aéroport, a high-end hotel with heated pool, tennis court, and fitness room, located just minutes from Nantes airport. As Chef de Partie, you will collaborate with the Chef and commis to produce the entire menu with a spirit of excellence and quality.
You will work in an organization that values versatility and mutual support, maintaining constant communication with the dining room. Your responsibility includes preparing and producing all dishes with your team, as well as managing supplies and stock to ensure the highest quality of products.
You will organize and supervise the work of the team under your responsibility, including commis and apprentices, providing them with the best training to pass on your knowledge and skills. You will also ensure compliance with hygiene and food safety regulations.
With a natural rigor in product selection, dish preparation, and plate presentation, you will be able to rely on the team to creatively develop new concepts and recipes using fresh ingredients. This role offers the opportunity to grow within a dedicated team oriented towards individual and seminar clientele.
Requirements
- Natural rigor in product selection, dish preparation, and plate presentation.
- Ability to develop creative new concepts and recipes based on fresh ingredients.
- Minimum 3 years of experience in a demanding team-oriented culinary environment.
- Experience working with a team focused on individual and seminar clientele.
- Qualities: rigor, precision, discretion, pedagogy, and versatility.
- Bac pro or technologique (French high school diploma in culinary or related field).
