About this role

Château la Commaraine, founded in 1112, is a historic Burgundy estate transformed into a luxury boutique hotel. Surrounded by its Clos Monopole vineyard cultivated in biodynamie, it seeks a Chef de Partie Pâtisserie to support Chef Pâtissier Rémi GUERIN.

As the right hand to the Chef Pâtissier, you will supervise commis, apprentices, and stagiaires while crafting pastry preparations. You will evolve across breakfast and lunch services and contribute to special events, both internal and external.

The hotel features 37 rooms, a spa, pool, and two restaurants supervised by Meilleur Ouvrier de France Christophe Raoux. You will help uphold the highest standards, including LQA and Forbes, in an environment blending vineyard work with guest pleasure.

This role offers the opportunity to shape the pastry identity of an iconic house within the Champagne Hospitality collection. Located on the Route des Grands Crus near Beaune, the château provides a unique setting for culinary excellence.

Requirements

  • Passionate about pastry, with a desire to sublimate products and create memorable experiences.
  • Rigorous and organized, comfortable evolving in a demanding environment where teamwork and creativity matter.
  • Proficient in HACCP standards, combining technical precision and attention to detail.
  • Curious about new trends and the art of the table.
  • Experience in a gastronomic establishment or luxury hotel is a strong asset.

Responsibilities

  • Supervise commis, apprentices, and stagiaires, and transmit your expertise to them.
  • Elaborate pastry preparations in collaboration with the Second and the Chef.
  • Work breakfast and lunch services at the Château la Commaraine.
  • Contribute to preparation of special events, both internal and external.
  • Lead your section to create a work environment conducive to everyone's fulfillment.
  • Ensure compliance with LQA and Forbes standards.
