Own daily kitchen operations including fiscal budgets, labor productivity, scheduling, inventory control, and the development of menu strategies to produce both short-term and long-term profitability. Represent the kitchens in divisional and property meetings while ensuring compliance with all policies and health standards.
Collaborate with divisional Directors and kitchen teams to deliver seamless product execution across time standards, recipe specifications, and quality. Interact directly with guests to resolve feedback and maintain satisfaction in a high-volume luxury environment.
Build a work environment that promotes teamwork, performance feedback, recognition, and employee satisfaction while overseeing hiring, training, and succession planning that supports the company’s diversity commitment.
Requirements
- Bachelor's Degree or relevant experience in a related field
- 2+ years of prior relevant experience working in a Culinary environment as a Chef
- Previous experience managing employees under a collective bargaining agreement preferred
- Previous experience working in a banquet kitchen, high-volume restaurant, or luxury/fine-dining restaurant preferred
Responsibilities
- Own, lead and oversee daily kitchen operations, fiscal budgets, labor productivity, scheduling, inventory control, guest service standards, and menu strategy execution for short-term and long-term profitability.
- Represent the kitchens in divisional, property or corporate meetings and drive execution of company-wide initiatives and programs.
- Maintain the highest standards of health, sanitation and cleanliness while ensuring all staff complete required compliance training.
- Manage Human Resources responsibilities including performance feedback, recognition, quality hiring, training, and succession planning under collective bargaining agreements.
- Review BEOs, SEOs and MEOs daily, react to guest feedback, and take appropriate action to ensure satisfaction and product quality.
- Collaborate with Directors and kitchen teams to ensure seamless execution of product delivery, recipe specifications, and quality standards.
