About this role
As a Sous Chef at Diablo’s inside Luxor, you will lead the creation of vibrant, flavor-packed dishes inspired by bold Mexican and Southwestern cuisine. You'll ensure every plate meets the highest standards of quality, consistency, and presentation.
Your day-to-day includes training Master Cooks, Cooks, and pantry workers on job responsibilities, ensuring requisitions are processed properly, and labeling all products for safekeeping and sanitation. You'll maintain expertise in base sauces, stocks, and soups while guaranteeing superior food quality.
You'll collaborate with a talented culinary team and communicate with management and service staff to fulfill guest and employee needs. At MGM Resorts, you'll work in an environment full of excitement, diversity, and entertainment alongside passionate hospitality professionals.

Requirements
- High School Diploma or GED
- Work varied shifts, to include weekends and holidays
- 2+ years of prior relevant experience as a supervisor/chef
- Associate's degree in Food & Beverage and/or course certification from an accredited Culinary Institute preferred
- Experience managing employees using a Collective Bargaining Agreement preferred
- 5+ years of prior relevant experience in a high-volume restaurant production as well as in a hotel/casino environment preferred
Responsibilities
- Train Master Cooks, Cooks, Pantry Workers and Helpers on job responsibilities
- Ensure requisitions are processed properly and placed in designated area
- Label and date all products to ensure safekeeping and sanitation
- Maintain knowledge, understanding and preparation of base sauces, stocks and soups
- Ensure food quality is superior and take action to correct any irregularities
- Communicate with management and service staff to fulfill and address any issues or needs requested by guests and employees
- Assist the Executive Chef by controlling purchasing, receiving, purveyor lists and inventory of all kitchen items
- Prepare and administer kitchen schedule
