
About this role
Highgate is a leading hospitality management company with a global portfolio of over 400 hotels. The Line Cook prepares all food items based on standardized recipes for Restaurants, Room Service, Employee Cafeteria, and Banquets. This role maintains the highest standards to produce an appealing and appetizing product while minimizing waste and maximizing cost/production ratio.
Complete necessary food and station preparation prior to restaurant opening to ensure prompt guest service. Prepare foods following hotel standard recipes, including specials under Chef direction. Handle buffet setup, banquet stations, and Employee Cafeteria service as required.
Work in a 243-room boutique hotel centrally located in downtown Miami near Bayfront Park and Biscayne Bay. Guestrooms overlook the skyline or bay, with onsite Biscayne Tavern offering three meals. The kitchen supports a stylish modern environment for business and leisure travelers.
Maintain cleanliness, sanitation, and safety in all work areas using a 'Clean As You Go' policy. Follow Health Department regulations and practice safe habits to avoid injury. Support any kitchen position as needed to ensure smooth operations.
Requirements
- Recognize quality standards in fresh vegetables, fish, dairy and meat products
- Knowledge of proper handling, storage, and sanitation
- Ability to operate and maintain cleanliness of all kitchen equipment
- Familiarity with production charts and standardized recipes
- Practice safe work habits to avoid injury
- Know location and operation of fire extinguishing equipment
Responsibilities
- Prepare all foods following hotel standard recipes
- Complete necessary food and station preparation prior to restaurant opening
- Maintain cleanliness and organization of all storage areas
- Prepare and display buffet food items according to hotel standards
- Prepare food for Banquets following Banquet Event Orders
- Breakdown buffets and kitchen line, storing food and equipment properly
- Work banquet food station as scheduled
- Follow all Health Department and Company regulations regarding food storage and safety
