Your daily responsibilities include executing opening and closing checklists, maintaining the Taste-Plate log, and ordering accurately to par. You will support line operations while ensuring cost control through careful portion management and inventory accuracy.

Requirements

  • Previous experience as a sous chef or lead line cook in a high-volume kitchen.
  • Strong knowledge of food cost control and inventory management.
  • Understanding of health department regulations and safe food handling practices.
  • Ability to train and lead kitchen staff with enthusiasm and passion for Discovery.
  • Passion for craft beer, small-batch whiskey, and high-quality food.

Responsibilities

  • Achieve restaurant financial objectives by forecasting requirements, preparing annual budgets, scheduling expenditures, and analyzing variances.
  • Control costs through portion management, reducing food and labor waste, and executing accurate inventories regularly.
  • Ensure compliance with Alcoholic Beverage Commission regulations and local safety codes to avoid legal challenges.
  • Maintain a safe, secure environment by enforcing sanitation standards and implementing disaster plans.
  • Manage restaurant ambiance by controlling lighting, music, table setups, and live music arrangements.
  • Complete opening and closing checklists and maintain the daily Taste-Plate log.
  • Order ingredients accurately to par and support line operations during service.
