Requirements

  • Proven experience as a Sushi Chef or Chef de Partie in a high-volume restaurant
  • Strong knowledge of sushi preparation techniques, including nigiri, sashimi, and maki
  • Expertise in handling and preparing raw fish safely in accordance with hygiene standards
  • Familiarity with Japanese ingredients, seasonings, and traditional culinary practices
  • Knowledge of food safety regulations and HACCP standards
  • Excellent knife skills and precision in fish cutting techniques
  • Strong organizational and time-management skills in a fast-paced kitchen environment
  • Flexibility to work shifts, including evenings, weekends, and holidays

Responsibilities

  • Prepare nigiri, sashimi, and maki with precision and traditional techniques
  • Handle and prepare raw fish safely while maintaining hygiene standards
  • Maintain consistency, quality, and presentation under pressure
  • Apply excellent knife skills and precision in fish cutting
  • Ensure all sushi meets luxury hospitality standards and guest expectations
  • Organize station and manage time effectively during service
  • Collaborate with the kitchen team to support overall operations
