About this role

The Senior Sous Chef actively supervises, coaches, counsels, directs, trains, and mentors employees to meet company quality standards. This key position ensures a positive, harmonious, compliant, and cooperative work environment. It drives the effective and profitable operation of the business.

Supervise line set-up, prep, and breakdown activities while delegating tasks to line personnel during service. Oversee buffet, beverage, break, and carving table set-ups, including equipment like chafing dishes and sternos. Assist the Executive Chef with food inventories, ordering, and employee scheduling for full coverage.

Work at the Arthur R. Outlaw Mobile Convention Center, a 317,000-square-foot waterfront facility with exhibit halls and ballrooms. Enjoy downtown Mobile's accommodations, dining, and river views just steps away. Staff provides full event support from pre-planning to execution.

Maintain excellent attendance with open availability for evenings and weekends on an event-driven schedule. Demonstrate professional presentation, outstanding interpersonal skills, self-direction, and strong management abilities. Contribute to Oak View Group's global platform in live entertainment venues.

Responsibilities

  • Supervise all line set-up, prep, and breakdown activities
  • Delegate tasks to line personnel during service
  • Supervise buffet, beverage, break, and carving table set-up and breakdown
  • Set up equipment including chafing dishes, sternos, china, serving ware, silverware, bowls, platters, heating lamps, and cutting boards
  • Assist Executive Chef with kitchen record keeping, food inventories, and ordering food products
  • Organize employee work schedules to ensure coverage for all kitchen areas
  • Measure, mix, and cook ingredients according to recipes
  • Maintain a clean kitchen with no food debris on floors, walls, equipment, or work tables at end of day
