About this role
This position supports the work of the YMCA of the Rockies, Snow Mountain Ranch, which operates a mission-based family and group conference and retreat center, and residential camp, serving more than 50,000 guests annually. The CCO Food Service Manager leads and assists in the preparation of food at the Camper Hub. Responsible for compliance with federal, state and county health regulations.
Direct all aspects of food production for residential camp food service serving over 400 campers and staff weekly, including ordering, preparation and inventory. Execute planned meals to the specification of Food Service Director and Executive Chef to fit nutritional and dietary expectations. Acts as lead Chef in preparation, cooking, and distribution of special diet meals for CCO.

Requirements
- Understand cleanliness and sanitation protocol as directed by the YMCA of the Rockies and the Colorado Department of Health
- Maintain a hygienic, neat, clean, professional appearance and presentation at all times
- Ability to train, schedule, supervise and evaluate kitchen staff
- Proficiency in high-volume food production and special diet meal handling
- Skills in food ordering, inventory management, and budget control
- Experience assisting with menu development for camp and catering
- Flexibility to work holidays, weekends, and morning or evening shifts
Responsibilities
- Train, schedule, supervise and evaluate kitchen staff on camp food service operation in the summer months
- Train, schedule, supervise and evaluate kitchen staff on catering food service operation throughout the year
- Direct all aspects of food production for residential camp serving over 400 campers and staff weekly, including ordering, preparation and inventory
- Execute planned meals to the specification of Food Service Director and Executive Chef for nutritional and dietary expectations at CCO
- Act as lead Chef in preparation, cooking, and distribution of special diet meals for CCO
- Handle all ordering and inventory of products in the CCO hub and catering operation
- Assist Executive Chef with menu development for both CCO and Catering
- Manage and operate within approved budget for camp food service expenses and labor costs
