About this role

As Demi Chef De Partie, I will fully comprehend the vision of Six Senses to help people reconnect with themselves, others and the world around them. Sustainability, Wellness and Out of the Ordinary experiences are at the core of everything we do at Six Senses.

In this role, I will assume full responsibility for the efficient operation of the pastry kitchen. I will check the production schedule to determine variety and quantity of goods to bake, measure and mix ingredients to form dough or batter, and roll, cut, and shape dough to form rolls, pie crusts, tarts, cookies, and related products.

I will cut, peel, and prepare fruit for fillings, place dough in pans, molds, or on sheets and bake in oven, observing products while cooking and adjusting controls. I will mix icings and other toppings and decorate cakes, pastries, and other baked goods, using a variety of kitchen tools including electric mixers, pans, rolling pins, and cutting tools.

I will follow proper plate presentation and garnish set up for all dishes, and ensure all equipment and working area are kept clean and in good working condition. This role offers the opportunity to live and work in a remote location for extended periods, fully embracing the Six Senses ethos of local sensitivity and global sensibility.

Requirements

  • High school diploma or equivalent and at least 1-3 years pastry kitchen experience in a full-service outlet or similar setting.
  • Hospitality diploma/degree from a recognized hospitality school is preferred.
  • Alcohol awareness certification and/or food service permit or valid health/food handler card as required by local or state government agency.
  • Excellent command of written and spoken English.
  • Able to live in a remote location for extended periods of time.
  • Complete understanding of and adherence to Six Senses’ policy relating to fire, hygiene and safety.
  • Strict adherence to LQA standards and guest comments.
