About this role
L’Hôtel La Ponche, the most discreet and authentic Tropézien hotel, seeks new ambassadors for the 2026 season. Nestled between La Ponche beach and the old village alleys, it receives guests like a big family in strict confidentiality. Open 9 months a year with diverse opportunities.
The Chef de Partie makes mises en place and realizes services respecting the chef's indications. Responsibilities include ensuring respect of consignes, safety rules, and HACCP. Supervise production at your station while training commis and stagiaires.
Work in an intimate setting with 25 elegant rooms and a sea-facing terrace restaurant. Enjoy Provençal and Mediterranean cuisine signed by Chef Exécutif Simon Pinault. Bathed in sunlight reflecting on ochre roofs and blue sea-sky hues.
Participate in breakfast, room service, and staff meals per established menus. Maintain cleanliness of fridges, freezers, and equipment. Be proactive with plat suggestions to continue writing our house's history.

Responsibilities
- Supervise and assist with cleaning and maintenance of equipment and premises
- Train and support commis, stagiaires, and dishwasher
- Manage stocks and production for assigned station
- Dispatch services while supervising a commis or stagiaire
- Monitor HACCP steps on the hygiene tablet
- Ensure proper use of equipment for optimal work quality
- Participate in staff meals respecting established menus
- Prepare mises en place for the menu respecting recipes and technical sheets
