Requirements

  • Elementary knowledge of kitchen operations and initiative to learn essential functions
  • Basic knowledge of preparing vegetables, fruits, meats, poultry, game, reconstituted foods, stocks, soups, sauces, fish, shellfish, egg and dairy products, farinaceous foods, and cereals
  • Working knowledge of broil, roast, sauté, fry, poach, steam, and baking techniques
  • Excellent customer service, communication, and observation skills
  • Ability to sort, write, and count in English
  • High school diploma or equivalent
  • Must be able to push/pull and lift/carry 50 pounds unassisted, work overhead, tolerate repetitious hand/arm/wrist movements, and stand/walk for long periods
  • Must be able to tolerate long periods of knife use and shift between multiple activities in a timely manner

Responsibilities

  • Follow sanitation safety procedures and daily sanitation guidelines
  • Utilize proper hand washing techniques and maintain personal hygiene
  • Maintain temperature logs for hot and cold items, cooking and holding times
  • Follow standardized recipes for preparation of vegetables, fruits, meats, poultry, game, stocks, soups, sauces, fish, shellfish, egg/dairy, farinaceous foods, and cereals
  • Perform knife cuts, preparation methods, and line positions with proper plate presentation
  • Monitor food quality and control waste
  • Exemplify core values, family style service, mission, vision, and DEI culture
  • Perform other job-related duties as assigned
